During droughts the sugar content in apples increases. Extreme drought can kill trees, but the right amount leads to overly developed apples with high sugar, tannin, and flavor content. In 2019 an extended drought hit Nelson County, VA, and two of our growers there produced GoldRush apples with sugar contents we’d not yet seen.
High sugar leads to high alcohol, especially when it comes to ANXO cider since we ferment all of the natural apple sugars into sugar-free cider, but high sugar also indicates extensive maturation and ripening.
We made this cider exactly as we make Cidre Blanc using the same apple, yeast, fermentation vessels, and even some of the same orchards, yet this cider is notably different from Cidre Blanc. The usual pineapple, star fruit, and papaya notes that Cidre Blanc is known for are exaggerated and unxious, and the elevated abv adds to the punch. This is a big cider and not meant for every day consumption!
If you live outside of DC you may not buy this cider. We’d love to sell it to you, but our government prevents the sale of cider or wine 7% or higher in 12oz vessels. Crazy, right? By producing and selling this product completely within the District of Columbia, we can say F#&% off regulation!
