Description
100% Gewürztraminer hand-harvested at full ripeness from 16-27 year-old vines grown in clay/limestone soil. The grapes are destemmed and macerated on its skins for 15 days before pressing. A relatively short spontaneous fermentation is completed with only the help of native yeasts. The wine is aged for 10-12 months in old 500L before bottling unfined, unfiltered, with no additional SO2.
