We teamed up with our friends at Right Proper Brewing & Heurich House Museum to bring you our first-ever dry-hopped cider! With the addition of hops to this year’s Liberty Apple, the recipe is closer than ever to Christian Heurich’s original prohibition-era cider! To make Liberty Apple we naturally fermented Stayman Winesap apples from Smithsburg, MD’s 78 Acres in a 1000 gallon oak foeder previously belonging to Right Proper Brewing without the addition of any commercial yeasts. After a slow, cool fermentation, generous amounts of choice Pacific Northwest Citra, Mosaic & Nelson Hops were added to the foeder providing enticing citusy aromatics and a bright, zingy, lemony finish on the palate. Having said we’d never hop a cider in the past, we couldn’t be happier that we finally did it!
