TABLE CIDER 2021 –
Released seasonally in rolling small parcels, our Table Cider reflects the sheer joyous drinkability of great cider, its natural affinity with food and its ability to capture the essence of each harvest in every glass.
With its juicy fruit, gentle sparkle, supple tannins and modest alcohol, Table Cider makes for happy company in any conversation or meal.

ON THE BEECH 2020 –
On the Beech Sparkling is a very limited edition, single barrel, follow-on to last year’s critically acclaimed still version.
A barrel matured blend of White Beech, Major and Browns Apple, bottled with a little cryo-extracted apple juice to gain some natural sparkle. Aromatically it’s as good a cider as we’ve made – all beautiful, dusty honeysuckle perfume and wine gums on the nose.
Hazy orange gold in the glass, it’s loaded with bright, juicy fruit – apricot, yellow plums and orange skins – all carried along by some gorgeous, twangy acid. 6.7% abv
NETHERWOOD ESTATE RESERVE 2020 –
The 2020 growing season was one of the best of the century for cider apples and it’s no surprise that the old orchards on the nearby Netherwood Estate were bursting with wonderful apples.
In the late autumn we hand picked two varieties: the rare, evocatively named Brown Snout and a true classic, Yarlington Mill. Pressed together, the juice underwent natural fermentation, before heading to barrel – ex-white burgundy – to mature. After a few months the cider was bottled together with some cryo-extracted apple juice to develop some sparkle.
Crafted specially for the sustainably-focused, Michelin-starred restaurant Pensons, in the glass this is a beautiful, deep, hazy orange colour. This is reflected in the aromatics which combine the scent of spiced oranges with something more earth bound and autumnal.
On the palate, it’s super juicy and complex, laden with yellow fruits and overlaid by a herbal, floral quality, warm spices and distinct minerality that capture the whole of the orchard. Its soft tannins and perfume linger long at the finish. 6.8% abv
HARD RAIN HOT PINK 2020 –
Naturally Sparkling Dry Ciderkin
The latest adventure in cider piquettes, aka ciderkins, brings together the second pressing of egremont russet apples, spontaneously fermented, then dry hopped with Chinook hops grown on the farm and bottling with a little sugar and organic blackcurrant juice, to induce not only a beautiful colour but a second fermentation in the bottle.
Glorious hazy, watermelon pink with vibrant sparkle, the hops and blackcurrant leaf come out to play on the nose. On the palate it’s super fresh, tangily lactic with rhubarb, grapefruit, cranberry, blackcurrant and apple flavours. 4.5% abv.
PET NAT POIRÉ 2020 –
We were very thrilled to get hold of three varieties of French perry pears in 2020, grown by our friend Stephen Ware at Throne Farm in Weobley.
We stored handpicked Longbois, Faucett and Antricotin in approximately equal quantities to let them fully ripen, before milling and macerating for 48 hours. After pressing they were sent to tank to ferment spontaneously, before later bottling as a pét nat. No additions.
The result is a sleek, elegant perry that oozes creamy ripe pear fruit – the whole fruit that is, including skin and core – along with distinct lime leaf, aniseed, kiwi and melon. Subtle tannins, gentle sparkle and soft acid rounds everything out perfectly. – 6.6% abv

GREAT PARTON FARM FOXWHELP CIDER –
This luminescent red apple is a tart monster with a powerful apple aroma with that hint of strawberry at the end. Rich, deep gold colour with a very fruity apple sauce aroma in the mid range & hints of strawberry at the end. Very tart in the taste but 18 months has softened & plumped the cider out a bit. It remains sour & vibrant in the mouth.
VINTAGE CIDER 2020 –
Dry Still Fine Cider
A bright, burnished cider: on the nose wood, spice, char, vanilla & ripe fruit. Flavour of sweet fruit to start then touch of brett, funk, then oak, char & more over ripe fruit. So full & round.
Great finish with satisfying mouthfeel of sweet fruit & spicy charred oak. Fermented with wild yeasts in ex whiskey barrels for the most part. Alc. 6.6% vol.
BOTTLE CONDITIONED CIDER –
A blend of bittersweet cider apples collected from traditional Herefordshire orchards; keeved & bottle conditioned to a wonderful mousse. Showcases the quality of the regions traditional cider apples, in a method of making that does not exist in the world of wine.
A hazed amber liquid with classic Oliver’s phenolics of tobacco & fruity spice, mixed with rich ripe autumnal apple. Nice pointing acidity, good length & full mouthfeel. Opens with a gentle pop. Fermented with wild yeasts. Alc. 6.5% vol.
NITTINESS & WHIZZ –
Made to celebrate the release of James Crowden’s new book “Cider Country”, this Pet Nat honours the cider made in the 1600’s in Herefordshire, using vintage Herefordshire Cider apples & blending the best of the 2020 seasons harvest; this sparkling cider uses old language to describe the most modern of drinks.
Classic bittersweet apple spice on the nose & a big, earthy, fruity cider with wonderful apple sweetness, & beautiful conditioning which allows this cider to sing. Approaching 400 years of cider making since the legendary Redstreak apple covered Herefordshire. Alc. 4.3% vol

Sparkling Medium Cider Blended With an Ice Cider
Barrel fermented & aged cider co-fermented with partial ice cider: made with classic bittersweet & bittersharp varietals such as Yarlington Mill, Dabinett, Michelin, Catley Red, Foxwhelp, & Redstreak, from traditional Herefordshire orchards grazed by sheep & Hereford cattle.
Opens up with a pop, & foamy pour that settles quickly. Golden in colour, the barrel wood & vanilla hits you first then ripe fruit, & layered fruity residual sweetness from the ice cider before pushy tartness makes itself known. This is a fruity barrel aged cider with full mouthfeel & long lasting aftertaste. Alc. 7.8% vol.
